Gravy: Mushroom Vegan

YIELD 2 to 3 cups

INGREDIENTS

SMALL BOWL:
2.5 oz white onion, finely chopped (1/4 cup)
2 oz crimini mushrooms, finely chopped (1/4 cup)

INDIVIDUALLY (ready to use):
1/4 cup olive oil
1/4 cup all-purpose flour
2 to 3 cups vegetable stock
dash of soy sauce (optional)
salt and pepper (optional)

PREPARATION

1. In a deep saucepan over medium-high heat, heat oil. Then add SMALL BOWL and cook, stirring, until well browned.

2. Whisk in flour, keep stirring with the whisk and cook until golden brown.

3. Carefully and slowly whisk in the vegetable stock, a bit at a time. A smooth sauce will form. Simmer until thickened. Season with soy sauce, salt and pepper, if you want.

NOTE Just add water when reheating. Also, recipe is easily doubled if more needed.
